Welcome to the first instalment of Distillers’ Diary. I’m Dale Williams and together with my wife Claire we create Eden, Tasmanian Single Malt Whisky on our small family farm at the foothills of kunanyi/Mt. Wellington.
As I write my very first Distillers Diary entry I am comforted by the rain pattering down on the distillery roof. "Gloria" (our copper pot still) is whistling in the background as delicious New Make Spirit (Hearts) gently trickles from her condenser. It's been very cold for the past few days so the warmth radiating from Gloria is very welcome.
I’d like to take the opportunity to thank you for your overwhelming support over the past few weeks since we went “live” with our first releases, “Authors Make” (ex Tasmanian Pinot Cask) and “Autograph” (ex Bourbon Cask). Both selling out before the launch which was held to coincide with Tasmanian Whisky Week. The unanimous reaction to our whisky on the night was that of excitement and delight, leaving many hankering for our next release.
